I’m sure many here may know of this, but for those that don’t, here’s a good way to start carrots. They are mixed 1 seed packet in a pre made cornstarch (2tb) to 1 cup water. When cooled, mix in seeds, put in plastic bag, cut one corner, and pipe into shallow “ditch”, cover and water. It helps spread seeds, reducing thinning and keeps seeds moist. I’ve used it on poppy seeds too. #gardening #vegetables #carrot #seeds

Do "real New York bagels" always have malt in?

Because I haven't been trying to make "New York-style bagels" - mine aren't that or Montréal but are closer to Montréal style* - but I was looking up something else and found a couple of people saying that.

anyway I was wondering because I might try it? but I want to know what I'm trying xD

  • No wood burning oven because lol this is my house, no honey in the boil water, otherwise about right

@moira I use diastatic malt powder in the mix. It’s a traditional additive with enzymes that help doughs rise and ferment. Barley malt can help with this too. I add that to my boiling water. I can’t say how this relates to NY bagels though.

@moira Yes, I get it online. I think King Arthur sells it. You can definitely go without it, though. Just a bit different texture with it.

@dancinyogi yes, it was a chronic problem for me for a long time. I got to the point that I didn’t want to go to bed for fear of really bad cramps (they’d last 15-20 minutes and were very painful). I tried taking Mg, but no help there. Fortunately, I went to my doctor and after blood tests we found my vitamin B12 was really low (the lowest she’d ever seen). I had weekly injections for a few weeks, but now I just take B12 pills. Cramps are completely gone.

Someone I love has high blood pressure and really should go on a lower-salt diet.

Does anyone have good recipes that actually taste good, are easy to make, and are low in sodium? I'm researching online but it's hard to tell which actually taste good and which don't.

@dancinyogi Outside of physical and dietary concerns, it’s good to remember that it’s called hypertension, and much of it can be mental stress. For many of us, stress causes imperceptible muscle contraction, restricting blood vessels and raising BP. You are uniquely qualified to help here through meditation and yoga. Perhaps you can help this way too. Most people would be surprised how much simple mental relaxation exercises can help.

Spoon tomatoes. Pea sized fruit with a very strong tomato flavor. A different thing for the garden that goes well in omelets, salads, or wherever you need a surprise flavor pop.

@GottaLaff The main thing I remember about Graham is that he went from a vocal Trump critic to a very vocal Trump supporter/defender after just one afternoon on a golf course with TFG. Trump has something very damaging on Graham and he’s continually scared it will come out.

What was the most memorable experience you've had at work?

I'd say the time a woman went into labor when I managed a maternity store would crack my top five. I thought I'd have to deliver the baby in the fitting room! She gave birth five minutes after leaving the store!

Second place would be when I drove a corporate CEO to the airport, and my car died on I-95. This was before cell phones were commonplace, so we had to flag down a cop. The jerk just sat in the passenger seat and let me do it🙄

@dancinyogi I was a statistician consulting with researchers in a college of agriculture. I had a woman come in with her data looking for help analyzing it. She had recorded ejaculations of lamas after “stimulating” them with electrodes on their testicles. I’d been on the job for three weeks …. True story!

@hankg Go for it. Not really hard. Suggestions: Use a mixer. The dough is stiff.
After rolling, cover with plastic wrap and fridge overnight.
After boiling the next day, I bake on sheet pan with parchment paper. Half way through cooking, I pull them, put another sheet pan over them, invert both and remove hot first pan and parchment, then finish the bake. If you use toppings, put that side down for first half of the bake.

I think I read somewhere that the spiral put less stress on the machine.
