Apparently someone at KU has developed a cheese that really tastes like cow milk based cheese.

For me as a fairly new vegan, this is the absolute holy grail.
There are many options out there and they are all revolting.

I make a mean cashew nut spreadable version but a proper cheese is still something I miss from my lactovegetarian days .
Wonder who I can ask for a taste test.. ?
(And if it's really good I'll be buying shares.)

I have to say I'm pretty floored by the 100% plant based crab cakes I just ate, made by Omni. Flavor-wise tasted exactly like a crab cake. Texture-wise it was as a good as your average mediocre crab cake you'd get in most of the world. So of course it wouldn't hold a candle to a good Maryland area crab cake but that's not a deal breaker for me in this context. Nutrition wise though it rocks. It has more protein by weight than lump crab meat but it has less sodium, half the fat, and half the calories of a real crab cake. Not only would I buy this again but I am going to try their other products too. omnifoods.co

The world needs to shift to a plant-based diet by 2030 to avoid a climate catastrophe, according to a new report. This would require reducing meat consumption by 90% and dairy by 60%, as animal agriculture is a major source of greenhouse gas emissions. The report also urges governments to invest in clean energy, green infrastructure, and circular economy to achieve the UN Sustainable Development Goals.

This is also why, as a #vegan/ #vegetarian based household going food shopping in #Denmark is an enraging experience.

Meat + dairy, especially the highly processed varieties are extremely cheap, and pre-packaged #plantbased equivalents are not.

We pay 25% tax on all products in DK, even food, the local co-op challenged politicians to drop 20% across all fruit and vegetables. The health gains alone would be phenomenal. Never mind the planetary gains.

So I save a ton of money on making a big multi portion pasta dish by cooking with dried lentils which are cheap (and last pretty much forever in a cupboard) vs mince meat / ground beef or pork.

Meat shrinks, loses a lot of fluid, so you need a lot of it and it's much more expensive in comparison. Lentils actually absorb and expand so you need far less and they are massively cheaper.

I chop & cook some pepper garlic onions adding a little boiling water regularly as needed (kettle or pasta pan) and lots of herbs and spices, then add the lentils and tamari or soy sauce. The lentils hoover up the liquids (don't let them go dry), & also the herbs, spices and tastes making them really flavourful.
