Misinformation on climate change is irresponsible & dangerous, so let’s be clear:

Consider just how many nudges you get in shows, on social, endless ads, pushing towards unhealthy, high profit, low nutrition, high cost, highly processed, high environmental impact, food.

LA food diary.

Some of you know I’m a big fan of LA food. I think that dollar for dollar you get a tremendous amount of cuisines, varieties of foods, in this melting pot which feels to me like it has far more immigrant and working class food than the Bay Area. Even the density and quality of ‘fancy food’ is high!

I’m keeping a record of my LA 2024 discoveries.

Starting a thread on the different types of tofu and how to cook them. (Some of these are vegan, some are not. In Chinese cooking, tofu is not a vegan protein):

  1. Egg tofu

This is one of my fave tofus. It isn't vegan. It's made with soy beans AND eggs. It has a eggy taste that egg lovers will love; but that goes way entirely when it's panfried lightly.

Should have trimmed the green beans better, I added potato water back and shouldn't have, but it tastes good so who cares. I already put some of the potatoes in a tub so it looks unbalanced

Tonight's , scratch cooked lasagne. And the first lesson is it's better to get over the feeling of "uurgh that Wusthof could take my fingers off" and just grab it. Especially for carrots. It makes the wee Kitchen Devil look like a toy.

Just thinking about how when I moved to this part of the world, I missed my home food a lot but found new cuisines and ingredients that filled that hole. Like, HK / Cantonese / Toishanese food (the primary Chinese food of SF) is similar to what I crave but not 100% it. Malaysian and Singaporean Chinese food hits different.

Mexican, Salvadoran food has felt more homey in some ways.

Speaking of how the food cultures you grew up with impacts you:

When I left Southeast Asia, I only knew how to cook mostly French and Italian foods. It didn't make sense to cook Malay or Indonesian or Chinese foods because, well I could buy it cheaply any time I wanted. In that region.

I learned quickly that because I had never eaten a simple meal my entire life, eating food that was prepared simply made me extremely sad. Like, mental health bad / my life is bad / why did I leave, bad

Many believe a significant way to address is to 'eat local,’ but that’s not always true. The impact all depends on the kind of + how & where it’s produced.

Some foods require fewer resources (water, energy) in some parts of the world. Season can be important. Overall, transportation has a much lower carbon footprint than land use change. And so on.

So instead of ‘eat local,’ let’s go with ‘eat thoughtfully.’ https://ourworldindata.org/food-choice-vs-eating-local

I found myself agreeing a lot with this Chinese Cooking Demystified video. The southern Chinese (especially tribal) foods near the border with Southeast Asia has a lot more in common with Lao or northern Thai food than with say, Shandong food (which in turn more closely resembles Korean food). The idea of nation states falls flat in the culinary sense.

When I was traveling around SE Asia I had a game I played with myself: if I meet a W or N European person, how soon before they tell me ‘food here is unhealthy because I don’t get to eat plain yogurt and raw vegetables’?

Very often, it was.. immediately lol

I mean, imagine saying that in the tropics, in a part of the world with almost no dairy industry

A bit like me dying of a lack of chillies there I guess

Did you know that the Romans' favourite went ?

Besides honey & grape juice, meals in were flavoured with imported dates from Judea ().

Date palm fronds were symbolic of - lawyers pinned them to their doors & generals wore special "toga palmata".

Judean dates were also shelf-stable & delicious.

Sadly, by the 19th c., they had vanished.

Except for a few 2000-year-old seeds.

They were successfully germinated in 2020.
