Salad is cool. Salad saves time. Salad saves you money. Salad is good for footprint. Ready prepped in the fridge is awesome for health, exec function, good choices & quick meals. Salad is good rebellion, in lots of ways.

Consider just how many nudges you get in shows, on social, endless ads, pushing towards unhealthy, high profit, low nutrition, high cost, highly processed, high environmental impact, food.

It's ok to rebel. Salad is cool😎

ArtBear,

Salad can be a secret weapon to saving yourself loads of time in the week. Make a big batch, it can keep for days.

✅ You just need a big bowl with a good lid that you can put in the fridge.
🚫 ❌ Don't add leaves.
✅ Add leaves separately at serving.

Apart from that
✅ knife
✅ chopping board
Nothing special needed.

ArtBear,

I make big batch salads at weekends etc. You save much cooking time by doing a batch. Plus it makes the easiest thing in your fridge healthy -how cool is that?

Variety is endless, but here's ideas.

Base:
✅ soy sauce or tamari
✅ garlic (frozen or fresh pressed)
✅ some frozen chopped herbs (coriander here)
✅ chilli flakes
✅ Tumeric and fresh ground black pepper (that particular 2combo is potent anticarcinogen in med studies)

ArtBear,

I'm not a TV chef who can pluck fresh lemons from a tree in my garden. Lemons in the UK are dreadful esp since Brexit. Typically hard, juiceless, turn to rocks in the fridge or go bad really fast if left out. Also ADHD comes with it's own ingredients realities which will understand.

I buy a bottle of already squeezed spanish lemon juice (where lemons are great). It keeps better longer and saves you time.

✅ Lemon juice

ArtBear,

So many ways to go but here's a good mix of:
✅ beans
✅ lentils
✅ spices
✅ herbs
✅ acid lemonjuice or a vinegar like applecider which is milder
✅ Soy sauce or tamari is a nice & healthier savoury taste

Sometimes I add
✅ sweetcorn too.

Stir it all up so it's mixed properly, don't wait until the bowl is too full.

ArtBear,

Chopping time. Board. Knife. Make sure you have good tunes on!

Peppers are always a favourite. Variety is good. Eating more colours is always good.

peppers are small pieces now. nice mix of colours.
more pepper chopping
Peppers go in the salad bowl.

ArtBear,

Batch cook larger portions really is mostly as fast as 1 small cooking when you consider clean up grabbing ingredients everything. Small cooking which you would then have to repeat a bunch of times through the week.

Batch is a cool habit to cultivate if u can, gives you time back. We all need more time right?

Cucumbers are nice crunch like peppers and more low Kcal to add volume to a batch salad.

Cucumber pieces added to salad.
Cucumber quarters now cross cut to make a board full of bite sized chunks

Now for the scariest word in cooking... Probably the most propagandized foodstuff in history...

Buckle up😂

Tofu is just beans. Call it not-chicken if it helps you process the concept!

If you don't like it you've bought a disappointing brand of Tofu. Or not spiced it. That's all. Tofu takes on flavours like chicken. Raw unspiced chicken is disappointing too, but unlike Tofu, raw chicken makes you sick.

ArtBear,

✅ Silk tofu is only for blending into a paste/sauce.
❌ Firm tofu that isn't firm is wrong brand.
❌ Tofu needing pressing & faffing is wrong brand tbh.
✅ Chop open the packet, give it one shake over the sink and it's already firm, tasty (mild taste), ready to eat - this is the brand you're looking for.

In UK you can't go wrong with
The Tofoo Co.
