About 10 years ago I Googled "easy camping food" and found a post about burritos.
I make "burritos" ahead of my trip, wrap them in heavy foil, and freeze them. They help keep the cooler cold. When you are ready to eat, pull one out, place it near the campfire, and turn regularly until warmed through.
I don't just make Mexican-style burritos. Almost any meal you can think of can be stuffed into a tortilla. Steak and potatoes? Tofu, rice, and veggies?
One year, I bought teriyaki chicken and rice from my favorite local restaurant and wrapped it a tortilla. Yum.
My camping friends are on the burrito train, too. At day's end, after fishing or hiking or swimming, we just crack open a beer, put our burritos by the fire, and chat - instead of chopping and boiling and stirring.
I hate to cook when camping, especially the washing dishes part. Camp burritos have changed my life.
